Gỏi cuốn ( fresh spring roll ) is a popular Vietnamese dish consisting of pork, prawn, vegetables, bún (bean vermicelli), and other ingredients wrapped in bánh tráng (commonly known as rice paper or cold roll) from Vietnam. Like other spring roll dishes, Chinese immigrants are thought to have originated in China and were imported to Vietnam, but the fresh spring roll has been adapted to accommodate local tastes.

Gỏi cuốn ( fresh spring roll ) are served fresh, while some, including the Vietnamese fried spring roll, are served fried. They are eaten (or cooled at room temperature and are neither deep-fried nor baked on the outside. In Vietnamese restaurants, these rolls are considered to be a very popular appetizer with clients.
